Cabbage and Kabasa Soup

This is a great inexpensive meal!

Tonight I made a cabbage soup with Kabasa! I didn't actually have enough Kabasa so i substituted Little Smokies!!! NUMMY

8 cups water

11 beef bouillon cubes

1 1/2 heads cabbage

6 carrots

5 diced potatoes

2 package Kabasa ( like I said I substituted 1 1/2 packages Little Smokies)

So simple!!! first you put the water and the bouillon cubes into a large pot, on medium. Then, you just chop the chop the cabbage into large pieces, because it shrinks, Chop up the carrots, potatoes, and kabasa into nice sized pieces, and add it all to the pot! I let it cook for about 1 1/2 hours.

While it was cooking I threw together a loaf of bread in my bread machine! Ohhh! It was so good! And a nice warm meal for a cool night!

Mom was not kidding everyone loved the Runza Casserole, she posted on her webpage -

Runza Casserole

3 cans crescent rolls (I only use 2 cans) I used 2 also Perfect amount for 9X13

2 lbs. hamburger
onion to taste, I chopped up one whole onion

4 cups shredded cabbage ( or you can use packaged cole slaw mix) I used half a cabbage

2 cups shredded mozzarella or cheddar cheese. Or a mix of both. Swiss would be good also. i used Monetary Jack I had left from a nummy chicken enchilada casserole,

I will post later:)

3 full carrots i added these, and shredded them with my cabbage( pretty much the same as my egg roll recipe, which i will try to post this weekend)
I also added 2 cloves of garlic for flavor!

Brown hamburger with onions. Drain. Salt and pepper to taste. Add cabbage to hamburger mixture and steam until cabbage is done. Place half of the crescent rolls in the bottom of a well greased 9x13 pan to form bottom crust. Put cabbage and hamburger mixture on top and then add cheese and cover all with the remaining crescent rolls. Bake at 350 degrees for about 45 minutes. Cover with foil the last 10 minutes so the rolls don't burn.

Taco Soup on a Nice Cool Fall Evening!!!

My meals have been very boring lately, and pretty much just repeats!

Except for the Taco soup I made the other night! It was DELICIOUS, and the whole family loved it! My son was saying GROSS the whole time it was being made, but when he took a bite, He quietly said,”This is good!”..

I took a lb of ground beef, browned it with one onion chopped into it.

Then added 6 cups water,

8 beef bouillon cubes,

1 bag frozen mixed veggies,

1 can corn

1 1/2 packages of taco seasoning(We make our own. i will post the recipe later.),

1can black beans,

2 cans pinto beans,

2 cans diced tomatoes.

Salt and Pepper to taste! Cooked for about 1/2 hour on medium heat!

When serving, I garnish with a spoonful of sour-cream, a sprinkle of cheddar cheese, and a few tortilla chips crushed on top.
